Each module is delivered through hands-on kitchen work, structured assessments, and direct mentorship — building the technical and professional foundation that takes graduates from first day to first job.

Health, Safety & Hospitality Standards

Kitchen safety, workplace hygiene, and hospitality standards. Building discipline and professionalism in every kitchen.

Food Safety & Hygiene

Food handling, storage, and HACCP principles. Maintaining safety and consistency in every service.

M03

Meat & Offal

Butchery, portioning, and cooking techniques. Building precision and confidence with every cut.

M04

Fish & Shellfish

Seafood preparation, filleting, and cookery methods. Handling delicate ingredients with skill and care.

M05

Fruit & Vegetables

Knife skills, preparation, and vegetable cookery. Creating balanced dishes from fresh ingredients.

Poultry

Preparation, portioning, and cooking techniques. Developing consistency, control, and kitchen confidence.

Fermented Doughs & Breadmaking

Mixing, proofing, shaping, and baking techniques. Understanding the foundations of quality breads.

Hot and cold dessert preparation techniques. Creating sweet dishes with balance and finesse.

Stocks, Soups & Sauces

Stocks, soups, sauces, and flavour development. Mastering the foundations of professional cooking.

No prior qualifications required. We look for commitment to the craft, willingness to learn, and the discipline a professional kitchen demands. Especially encouraged: youth from B40 communities for whom this credential is a turning point.
